In a large skillet or wok over medium heat, heat 1 tablespoon of oil until hot. Working in batches, add chicken cubes and cook until golden brown and cooked through, about 3 minutes per side. Transfer to a paper towel lined plate. 3. Heat the remaining oil in the skillet until hot and add the green onion. Cook for 1 minute until softened then add the BBQ sauce and stir to combine.
