When the weather starts to get nicer, it's the perfect time to start cooking outdoors. Fried chicken shashlik is a delicious and easy summer dish that will be sure to please everyone at your next barbecue!

What you'll need:

-1 pound boneless, skinless chicken thighs -1 tablespoon olive oil -1 teaspoon paprika -1 teaspoon garlic powder -1 teaspoon salt -½ teaspoon black pepper -1 cup buttermilk -2 cups all-purpose flour -canola oil for frying -4 tablespoons butter, melted -1 tablespoon parsley, chopped -lemon wedges for serving

Instructions:

  1. In a large bowl, whisk together olive oil, paprika, garlic powder, salt and pepper. Add chicken and toss to coat. Pour buttermilk over top and stir to combine. Let marinate for 30 minutes. 2. In a shallow dish, mix together flour and canola oil. Dredge chicken in the flour mixture until well coated. 3. In a large skillet over medium heat, cook chicken until golden brown and cooked through, about 4 minutes per side. 4. Serve chicken skewers on a plate with melted butter, chopped parsley and lemon wedges on the side. Enjoy!

1/2 tsp. smoked paprika

1/4 tsp. chili powder juices of 2 limes

2 tbsp. olive oil, divided Salt and pepper, to taste For the Shashlik: 8 wooden skewers, soaked in water for 30 minutes 1 red onion, cut into 1-inch pieces 1 red bell pepper, cut into 1-inch pieces 1 yellow bell pepper, cut into 1-inch pieces

4 cloves garlic, minced

1/4 cup fresh cilantro leaves, chopped 1/2 cup store-bought salsa

Directions: Step One: In a large bowl, combine the chicken cubes, cumin, smoked paprika, chili powder and lime juice; mix well and set aside. Step Two: Heat the oil in a large skillet over medium heat. Add the chicken cubes and cook until browned on all sides and cooked through (about 5-7 minutes). Remove from heat and season with salt and pepper to taste. Step Three: Preheat your grill or broiler on high heat. Thread the chicken cubes onto skewers (I did 4 per skewer) along with the red onion, bell peppers and garlic cloves. Grill or broil for 10-15 minutes until slightly charred around the edges. Step Four: Transfer to a serving platter and top with fresh cilantro leaves and store-bought salsa before serving. Enjoy!
