Marinate for at least 2 hours or overnight. To make the marinade: In a small bowl or jar, whisk together olive oil, soy sauce, honey mustard sauce, apple cider vinegar, garlic and smoked paprika until combined. Preheat the oven to 375 degrees F (190 degrees C). Set a wire rack over a baking sheet and coat with cooking spray. Place the marinated chicken thigh pieces on the wire rack and bake for 25 minutes or until cooked through; do not overcook or they will be dry.
