Toss to coat evenly. Heat oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden brown on all sides. Drain on paper towels. Thread the chicken cubes onto skewers (if using metal skewers, make sure they are well coated with cooking spray to prevent them from burning). Grill over medium-high heat for about 5 minutes per side, or until cooked through. Brush the skewers with barbecue sauce and serve immediately. Enjoy!

Ingredients: 1 (3 to 4-pound) whole fryer chicken, cut into 8 pieces 1 cup all-purpose flour 1 teaspoon paprika 1 teaspoon garlic powder 1 teaspoon onion powder Salt and black pepper to taste Vegetable oil for frying For the shashlik sauce: 2 tablespoons olive oil 1 onion, chopped 3 cloves garlic, minced 1 (14.5 ounce) can diced tomatoes, undrained 1 (6 ounce) can tomato paste 3 tablespoons white wine vinegar 3 tablespoons honey 1 tablespoon Dijon mustard 1 teaspoon smoked paprika Salt and black pepper to taste Instructions:

Preheat oven to 375 degrees F (190 degrees C).

In a shallow dish, combine flour, paprika, garlic powder, onion powder, salt and pepper. Coat chicken in the flour mixture until well coated. Heat vegetable oil in a large skillet over medium-high heat. Fry chicken in hot oil until golden brown and cooked through; drain on paper towels.

In a large saucepan over medium heat, heat olive oil. Add onion and garlic; cook until softened. Stir in diced tomatoes with juice, tomato paste, white wine vinegar, honey and Dijon mustard. Season with smoked paprika, salt and pepper. Simmer for 10 minutes or until heated through.

Thread chicken onto skewers alternately with onion and tomatoes. Grill over medium heat for 8 to 10 minutes or until chicken is cooked through and vegetables are tender. Serve with shashlik sauce.

In a small bowl, whisk together the olive oil, garlic and parsley. Season with salt and pepper to taste. Set aside. Thread the chicken cubes onto skewers (if using wooden skewers, soak them in water for 30 minutes before using). Grill over medium-high heat until cooked through, about 5-7 minutes per side. Serve with the garlic sauce on the side. Enjoy!
