Halve the chicken thighs if too large. In a large bowl or Ziploc bag, combine the chicken thighs with buttermilk, hot sauce, smoked paprika, garlic powder, onion powder, salt and black pepper. Marinate for at least 2 hours or overnight. To make the marinade: In a small bowl or jar, whisk together olive oil, soy sauce, honey mustard sauce, apple cider vinegar, garlic and smoked paprika until combined. Preheat the oven to 375 degrees F (190 degrees C). Set a wire rack over a baking sheet and coat with cooking spray. Place the marinated chicken thigh pieces on the wire rack and bake for 25 minutes or until cooked through; do not overcook or they will be dry.
